Why can’t you uninstall them?
The preinstalled apps in your new iPhone have been developed by Apple to ensure a good user experience. Even though there may exist apps from a third party with better performance, Apple won’t let you erase the default apps. And the main reason is that the default apps are essential for the correct functioning of your device.
For example, the Phone app is the main software to connect your phone and make calls. Something similar occurs with Messages for the SMS features.
